When you eat something cold and it touches the roof of your mouth, the sudden temperature change causes the blood vessels in the roof of your mouth to swell. This is to divert the warm blood to the cold area. The dilation of the blood vessels also triggers pain receptors. Some of the pain signals produced are carried by a nerve which alerts the brain to facial pain. When the signal researches the brain it incorrectly interprets the pain as occurring in the forehead due to the nerve in which the signal is carried.

So maybe less ice-cream and eat chocolate instead 🙂
